Local sourcing

Every workshop starts with a visit to Orange farmers market. You see what's available, talk to growers, and understand why certain ingredients are worth using right now.

Technique focus

Each session teaches methods that apply across ingredients. Roasting root vegetables in winter uses the same principles whether you're working with beetroot or parsnip.

Recipe adaptation

You learn how to adjust recipes based on what you find. If a dish calls for spring peas but they're not available, you understand which substitutions work and why.

What changed after the autumn workshop

Joined autumn workshop in 2024

I stopped buying the same vegetables year-round.

Before the workshop, my grocery list looked identical whether it was March or September. I'd buy tomatoes in winter and wonder why they tasted like nothing. The workshop showed me what actually grows around Orange during autumn and how to use it.

Now I plan meals around what's available at the market. Pumpkin, Brussels sprouts, leeks — ingredients I used to ignore because I didn't know how to prepare them properly. The techniques we learned apply to other seasons too. I'm not following recipes blindly anymore.
