Four stages that build on each other. Each session includes hands-on practice and a recipe you can repeat at home.
Understanding seasonal produce
You'll visit a local market with the instructor to identify what's in season. The session covers how to assess quality, when to buy specific items, and what to avoid. You'll select ingredients for the first cooking exercise.
Duration: 2 hours including market walk

Core techniques for each season
This stage teaches knife skills, heat control, and timing adjustments based on ingredient freshness. You'll prepare three dishes using the produce from stage one. The instructor demonstrates each step before you replicate it at your station.

Group size: Maximum 8 participants per session
Equipment: All tools provided, apron required
